I don't always eat steak, but when I do, it has to be perfect. One way that I learned to make it better is the reverse sear method. It takes a little longer to prepare, but it's worth it. My preferred cut of a steak is usually a Porterhouse. This time I picked up some New York strip. I usually get grass fed, but this one was purchased on short notice.
Cooking Instructions:
Let the steak sit at room temperature for an hour.
Season with salt and pepper to taste.
Turn one grill burner on the lowest setting.
Place steaks on the opposite side of the burner and insert thermometer probe.
Cook until the internal temperature reaches 120 degrees.
Remove steak and place on a hot carbon steel or cast iron skillet.
Place butter, chopped garlic, thyme and rosemary on top of steak (preferably fresh).
Sear on both sides for 2 minutes.
Baste the steak with the melted butter while the steak is searing.
Remove the steak from the pan and let sit 5-10 minutes.
