Chef Doug's favorite way to cook a steak at home. Reverse sear is when you cook a steak over low in direct heat until the desired steak temperature is reached then switch over to a hot grill and sear it off. You will find a more evenly cooked steak with this method. I prefer to cook over hardwood lump charcoal for this method as I feel you get a lot of natural smoke flavor in the meat.
