This hearty soup is perfect on a cloudy, cold, and rainy day. This soup is a Christmas Eve tradition for our family.
It's quick! It's easy! You'll probably already have the ingredients on hand in your pantry!
Ingredients:
2 lbs. of ground beef (browned)
1 Taco Seasoning packet
1 medium onion chopped (added after browning is my personal preference)
1 can of Rotel or tomatoes with green chilies
1 can of yellow corn (drained)
1 can of black beans (drained)
1 can of cannellini beans (drained)
1 can of diced tomatoes
2 C of water or broth (I used a bouillon cube)
Stir to mix
add 3 TBSP of dry ranch seasoning mix
Stir to combine
Cook for about 1 hr
Top with your favorite toppings and enjoy!
Freezes BEAUTIFULLY!
