JALAPENO-CHEDDAR-HONEY CORNBREAD
2 cups ALL PURPOSE FLOUR
2 cups YELLOW CORNMEAL
2 tablespoons BAKING POWDER
1 teaspoon SALT
1/2 teaspoon BLACK PEPPER
1-1/2 cups WHOLE MILK
1 stick (8 tablespoons) melted BUTTER
1/4 cup HONEY
2 EGGS
3/4 cup shredded SHARP CHEDDAR
1/3 cup pickled JALAPENOS, chopped or fresh
1 fresh JALAPENO thinly sliced for baking on top
Spray a 9 or 10 inch cast iron skillet with non-stick cooking spray and put into your preheating oven to warm. In a large bowl whisk all the dry ingredients together. Then add the rest of the ingredients except the thinly sliced Jalapeno. Stir together and pour into a hot cast iron skillet that has been preheating in the oven. Place the sliced jalapenos on top and bake at 350 degrees F for 40 to 45 minutes.
We eat gold cornbread on New Year's to bring prosperity to the year and because it is delicious!!!
