Hey Guys! Welcome back to my channel. In todays video I’m going to be making a Coconut Cake with Homemade Buttercream Frosting using a Box Cake Mix Hack. In my younger years the only thing I ever added to my box cake mixes was a little flour. The added flour gave the cake a little more firmness. I got that trick from my Mother and she got it from her Mother whenever she used a box cake mix. I first learned of box cake mix hacks from different coworkers. Through the years I’ve used different ingredients but it depends on what kind of cake mix you are using. Milk extra eggs and real butter makes a world of difference. The next time you are making a box cake mix use the following hack and taste the difference. I always use Duncan Hines cake mixes because I think that they have the best cake mixes on the market. They are closest to homemade and hacks work great with them. Basic Box Cake Mix Hack: Replace the water with whole milk Add 2 to 3 extra eggs Replace the oil with real melted butter but double the amount Add 1 Teaspoon vanilla extract Cook the cake according to the instructions on the box. Coconut Cake: 1 Box Duncan Hines White Cake Mix 1 Cup Whole Milk 4 Egg Whites 1 Whole Egg 2/3 Cup Melted Real Unsalted Butter 1 Teaspoon Pure Vanilla Extract In a medium size mixing bowl add all of the ingredients and mix together with an electric mixer for 2 to 3 minutes. Grease and Flour 2, 9 inch cake cans. Pour batter into the cake pans making sure to have equal amounts in the pans. Bake at 325 degrees F until done and a toothpick comes out clean when inserted in. Let cool before frosting. Buttercream Frosting: 4 Sticks Unsalted Butter, Softened 5 Cups Powdered Sugar 1/4 Cup to 1/2 Cup Whole Milk 1 Teaspoon Pure Vanilla Extract 1/2 Teaspoon Salt In a large mixing bowl add softened butter and vanilla. Using a hand held mixed beat butter and vanilla until creamy. Add salt and 1 cup of the sugar with a little of the milk until well mixed. Continue to add the sugar and the milk until there isn’t anymore left. Add enough milk to make your frosting smooth and creamy and easy to spread on your cake. Once the cake has cooled put the first layer on the cake plate and frost with the frosting. Add coconut on the top. Next add the second layer to the cake and frost with the frosting making sure to cover the to and the sides of the entire cake. Lastly sprinkle coconut on the top and the sides of the cake gently patting it down in place. You can add as much or as little of the coconut as you like. Use your own judgment.
