Hi I am an Independent Coach for Optavia. This is a health and wellness program that has led me to a 60lb. weight loss and the most energy I have had in a long time!
Broccoli Casserole
4 cups or 20 oz. of cooked chicken
2- 10oz bags of riced cauliflower
1-16 oz bag of broccoli
2 Tb of melted butter
2 beaten eggs
1 1/2 cups of Low fat Mozzarella cheese
2 tsp coarse salt
2 tsp onion powder
2 tsp garlic powder
1 cup low fat cheddar cheese
Preheat oven to 400
Combine chicken, cooked vegetables, mozzarella cheese, seasonings, butter and eggs in a bowl. After fully combined pour into lightly greased baking dish. Sprinkle the top with cheddar cheese. Bake for 50 minutes and then let stand for 10 minutes.
Makes 6 servings
1 Leaner / 2 greens/ 2 2/3 condiments / 2/3 fat.
