Ingredients (in total for both versions):
20 oz of Ground Turkey (85/15)
20 oz of Ground Beef or Chuck
1 Large Chopped Red Onion
2-3 Cloves (your preference) of Chopped/Minced Garlic
1/4 Cup Chopped Parsley
1 Cup Feta Cheese Crumbles
1 Tsp Dried Oregano
2/3 Cup Breadcrumbs
1 Cup Shredded Sharp Cheddar Cheese
Your favorite BBQ Sauce
1/2 Cup Chopped Smoked Bacon
2 Eggs
Salt & Pepper to taste (I used approximately 1.5 Tsp Salt and 1 Tsp Pepper in each)
Not Just For Beef Rub
Turkey Version:
In a large bowl, combine ground turkey, garlic, parsley, oregano, breadcrumbs, salt/pepper and 1 egg. Mix together well. Form patties as shown in video using a clean cup/bottle. Place layers of red onion and feta cheese inside "bucket".
Beef Version (Full Monte)
In a large bowl, combine beef, salt, not just for beef rub and 1 egg. Mix Together. Form patties as shown in video using a clean cup/bottle. Place layers of cheddar cheese, red onion, bacon and BBQ sauce inside "bucket".
The Cook:
Setup your Slow 'N Sear Kamado for a mid-temp cook by filling the Slow 'N Sear with half unlit coals and top the other half with lit coals. Adjust your vents to 1" open on bottom and a 1 setting on top. Allow grill to begin producing good clean smoke (thin blue). Place your burgers on the indirect side until they reach 160-165 degrees Fahrenheit internal temperature. Place them on the sear side for a quick sear (45-60 seconds), remove from cooker and allow to rest for a few minutes.
