Recipe and Instructions for reverse sear flank steak smoked marinade recipe. This recipe is for one flank steak, double the ingredients if doing two flank steaks.
Step 1: Clean the meat
Wash and dry the flank steak. Then remove any excess fat and any silver membrane if needed.
Step 2: Make the flank steak marinade (one flank steak, x2 for two flank steaks)
1/2 cup water
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup olive oil (or vegetable oil)
1/3 cup Worcestershire sauce (less or more based on your taste)
4-6 cloves of fresh garlic minced
1/2 cup fresh green onions chopped
Mix ingredients with a whisk
Step 3: Marinate the flank steak overnight (recommended)
Place the flank steak in either a ziplock bag or some sort of pan, as long as the flank steak is completely submerged.
Step 4: Smoke
Set the smoker to somewhere between 180-225
Smoke the flank steak for 45 minutes (don’t want to cook it too much)
Recommend putting cast iron griddle w/ oil throughout the entire cooking process to get it really hot.
Step 5: Heat up grill
Remove the flank steak from the smoker, turn the grill to high and get the temp over 400 degrees if possible (approximately 25 minutes).
Step 6: Sear
Melt some butter, pour it over the top of the flank steak (add minced garlic to the butter - optional).
Place the flank steak on the cast iron for 2-3 minutes per side (cook to your preference)
Note: If serving groups or various “doneness” preferences you can always pan fry rare or medium rare pieces in a skillet after it’s been cut.
Step 7: Carve
Cut the flank steak against the grain at a 45-degree angle to make sure it’s tender and not chewy
